What is wrong with a PDF template?

A PDF template can carry the plan. After a revision, earlier copies stay unchanged, so crew need a clear route to the updated document.

Does CallSheet still produce a PDF?

Yes. The published PDF is downloadable from the recipient page. Call-sheet email delivers the private link without a binary PDF attachment.

What does the link add that a file cannot?

It opens the shared published call sheet and records opens and explicit responses through that recipient link. Draft edits stay private until publication. Publishing updates the shared page, while you choose who receives a new email. A recorded send does not prove that someone read it.

Can I still archive a fixed copy?

Yes. Export the PDF and keep it. A record of what was sent is exactly what a snapshot is good for.
